Greencovery: Recovering organic acids and amino acids from side stream waste

GreencoveryEmbryoVentures

Food production creates large amounts of waste during the manufacturing process, known as by-products or side streams. Upcycling the waste can help make use of the otherwise discarded ingredients and thereby reduce the CO2 footprint of the factories and help create more sustainable food products. Customers are basing more and more decisions on the environmental, social and economic impact of the products they consume, therefore incentivising the companies to take action.

Founded by Carlos Cabrera and Juan Cajiao, Greencovery is on a mission to help food manufacturers effectively recover useful ingredients, mainly organic acids and amino acids, from their liquid side steams. Greencovery has successfully produced banana flavouring from waste created by vinegar production and also extracted potassium lactate (used in sports drinks) from whey. The ingredients are recovered using a two-step process - first, using resin to trap the ingredients and then adding a special formula developed by Greencovery to extract them. The process has been made less time-consuming and effective to ensure no by-products that are fit to eat end up discarded and help establish a circular economy.
